Lemon Rice

There are days when you want to go all out and make that multiple and/ or exotic ingredient dish, that you've been eyeing on all your social platforms, when nothing stops you, you are the monarch of all you survey, green grass at your heels, blue skies above and the sweet rays of the mid morning sun carry you to your counter top and within moments you are dishing out delectable drool worthy delicacies.... sounds familiar?.... no? hmm..... not to me either.

Life gets to the best of all of us, some have clingy toddlers, some trying tweens, some bossy bosses and some live far far away from home.

How lovely would it be then if you could whip up a wholesome hearty meal within a matter of moments and savor its tangy goodness, as you curl up on the couch and munch away....

Lemon rice tick marks on all those parameters. Hailing from the rice loving South of India this quick and easy to put together recipe requires only a handful of ingredients, it is a favourite of moms all over the country to pack in their kids' lunch boxes, kids love it just as much, as do adults.

The best part of this recipe however is that it uses up all your leftover rice, so you neither have to make more gravy to go with it - yay! nor do you need to purge it, thus saving you that major trip down the guilt aisle.

So lets see what we need
Serves: 1

You will need:

1 cup boiled rice (a day old is preferred)
1 tbsp raw peanuts
1 pinch asafoetida
1/2 tsp cumin seeds
1/4 tsp turmeric powder
2 dry red chilies
8-9 curry leaves
1 tbsp coriander leaves (finely chopped)
2 small green chilies (roughly chopped)
Juice of 1 lemon
2 tsps oil
Salt to taste


Start by heating the oil in a large pan, once hot add in both chilies, cumin seeds, peanuts, curry leaves, turmeric powder and asafoetida, once all the condiments turn slightly golden in colour, add in the pre boiled rice and toss with a light hand, making sure you donot break the rice.

Adjust salt according to taste.

Remove from heat, add in the lemon juice and mix well.

Garnish with freshly chopped coriander leaves.



Avoid reheating Lemon rice as it will leave you with a bitter taste.

If you want to pre make and serve later, make the rice before hand, heat and add the lemon juice just before serving.
