Hey all,
I hope I find you in good spirits as you read this, as I was writing my post on Dhansakh, I realised that no yummy Dhansakh is complete without some awesome tangy Kachumbar
So here is a quick recipe for the same :-)
2 Cucumbers
1 large onion
1 large tomato
A handful of coriander leaves (finely chopped)
1 tbsp Malt or White vinegar (optional)
2 lemons (cut into wedges)
Pepper or chilly powder to season
Roughly chop all the above vegetables (except lemons) and toss into a bowl.
Drizzle with vinegar and sprinkle with chilly or pepper powder.
Garnish with lemon wedges and coriander sprigs.
Scoop a spoonful and enjoy with Dhansakh, curry rice or any other meal of your choice.
Kachumbar is flexi that way it wont mind ;-)
